Yay, it’s Saturday! Here’s a great recipe for our little chefs to help with. Twice-baked potatoes, with fillings of your choice.

  • Clean potatoes under cold water and then pierce with a fork several times. Arrange potatoes on a baking dish (lined with foil), brush with olive oil, season with salt and pepper. Bake for one hour, on 200 degrees, then allow to cool.
  • Cut potatoes in half, scoop out most of the insides (leave a little bit so that skins don’t tear). Use butter to mash the potato adding fillings of your choice. (chicken, bacon, sour cream, chives, jalapenos…anything!)
  • Put the filling back into the potato skins. Bake again. Top with cheese and pop back in the oven (190 degrees) for 10-15 minutes or until cheese is bubbly. Salt and pepper to taste.
